DOC’S LOVE POTION

Ingredients

  • 1 oz Really Bad Rum (Spiced)
  • 1/2 oz Really Bad Rum (Silver)
  • 2 oz Guava Juice
  • 2 oz Mango Juice
  • 2 oz Splash Fruit Medley Juice Blend

Method

In a shaker with ice, blend 1oz Really Bad Spiced, 1/2 oz Really Bad Silver and mix in equal parts of the three juices to fill glass. Shake vigorously to create a froth and pour into tall Hurricane glass garnish with fruit optional.

  • A “Really Bad” Sea

    Ingredients

    • 1½ oz. Doc's (Spiced) rum
    • 1/4 oz. coffee liqueur
    • 1 oz. ruby-red grapefruit juice
    • 3 oz. ginger beer
    • 1 lime wedge

    method

    Build ingredients in a highball glass over fresh ice, squeezing the lime over the cocktail before dropping it in and serving cold.

  • Doc’s Painkiller

    Ingredients

    • 1.5 oz. Doc's (Dark) Rum
    • ½ oz Doc’s (Silver) Rum
    • 3 oz. Pineapple Juice
    • 1 oz. Cream of Coconut
    • 1 oz. Orange Juice
    • Dash with nutmeg

    method

    Combine ingredients in an ice filled shaker – Shake and pour into a cocktail glass.  Garnish with Cherry & Orange wedge & fresh nutmeg.

    If it really hurts and depending on how bad you want your cocktail strength, use  2 to 4 oz. of Doc’s (Dark) rum.

  • Doc’s Bloody Mary

    Ingredients

    • 1.5 oz Really Bad (Silver) Rum
    • ½ oz fresh lemon juice
    • 1 tsp. Horseradish
    • 1-2 Dashes Worcestershire sauce
    • A few dashes of Bitters
    • Spicy Zing Zang Bloody Mary Mix (or your house blend)

    method

    Combine all ingredients in an ice filled shaker, Shake and pour into tall glass. Garnish celery, tomato & lemon wedge. And BACON if you dare!

  • Mermaid Mer-Tini

    Ingredients

    • 1 oz Really Bad (Silver) Rum
    • ½ oz Coconut Rum
    • ½ oz Banana Liquor
    • ½ oz Blue Curacao
    • ½ oz Peach Liquor
    • 1 oz Orange Juice
    • 1.5 oz Pineapple Juice

    method

    Mix all ingredients in ice filled shaker, Shake and strain into martini glass. Garnish with cherry &
    orange peel.

  • Tropical Depression

    Ingredients

    • 1.5 oz Really Bad (Dark) Rum
    • 3 to 4 oz Ginger Beer
    • 1 to 2 oz Pineapple Juice
    • Garnish with Lime

    method

    In a tall glass filled with ice add Ginger Beer, top with Doc’s (Dark) Rum, and a splash of pineapple juice, garnish with a lime wedge.

  • Doc’s Bad Daiquiri

    Ingredients

    • • 2 oz. Doc's (Silver) Rum
    • • 1/4 oz. agave nectar
    • • 1 oz. fresh limes
    • • 2 fresh strawberries
    • • 1 dash soda water

    method

    Lightly muddle the strawberry in a mixing glass, then add the remaining ingredients. Fill with ice and shake until thoroughly chilled. Strain into an ice-filled rocks glass and garnish with a strawberry.

  • Doc’s Passion Mojito

    Ingredients

    • • 2½ oz. Doc's (Silver) rum
    • • 1 oz. passion-fruit puree
    • • 3 muddled mint leaves
    • • 1 lime
    • • 1 dash of simple syrup
    • • 1 splash of seltzer or club soda

    method

    Before preparing Doc’s Passion Mojito, infuse Doc’s (Silver) rum with fresh pineapple and a bit of habanero. In a tall rocks glass, muddle mint leaves before mixing in the rum, simple syrup, passion-fruit puree and the juice of one lime. Stir and top with a splash of seltzer or club soda before serving.

  • Bad Cape Codder

    Ingredients

    • 1.5 oz Really Bad (Silver) Rum
    • 3 to 4 oz Cranberry Juice
    • ½ oz Lime Juice
    • Top with club soda

    method

    In a Collins glass pour Doc’s (Silver) Rum add Cranberry Juice, lime juice (some leave this out,) and ice, mix & top off with club soda or seltzer . Garnish, with lime wedge and/or a sprig of mint.

  • Bad Rabbit

    Ingredients

    • 1 oz Doc's (Silver) Rum
    • 1/2 oz Amaretto
    • 1/2 oz Baileys
    • 1/2 oz Kahlua
    • 1 oz Half & Half

    method

    Combine all ingredients in a cocktail shaker. Shake then strain over ice cubes in glass.

  • A Really Bad Day

    Ingredients

    • 1 oz Really Bad (Dark) rum
    • 1/2 oz Licor 43
    • 3-4 oz Ginger ale
    • Garnish With Lime

    method

    In a Collins glass filled with ice add Doc’s Spiced Rum, Licor 43 and Ginger ale. Garnish with
    lime wedge.

  • Doc’s Happy Ending Coffee

    Ingredients

    • 1 oz Really Bad (Dark) Rum
    • ½ oz Irish Cream Liqueur
    • 4 to 5 oz coffee
    • Whipped cream
    • Cinnamon sugar for garnish (optional)

    method

    In a heat proof coffee mug add the Doc’s (Dark) Rum & Irish Cream.  Pour in the coffee, top with whipped cream and dust with cinnamon sugar.

  • DOC’S “REALLY BAD” CHICKEN WINGS

    Ingredients

    • 1/2 to 1 lb Chicken Wings
    • 2 eggs
    • 2 cups all-purpose flour
    • 1 teaspoon lemon-pepper
    • Vegetable oil, to fry

    method

    When it come to wings Doc had one way of doing them. 1st the wing should be served hot and dry. As Doc once said “let the eater decide what sauce to put on them. 2nd is how you want, them, mild or hot.

    Make them Dry

    •  Marinade in Doc Brown’s Really Bad Driftwood Smoked BBQ Sauce for 60 min or refrigerate overnight
    •  Heat a large deep-fryer or large Dutch oven, heat oil to 350 degrees °F on a deep-fat thermometer.
    •  In a small bowl whisk 2 eggs toughly.
    •  In a medium size mixing bowl add 2 cups all-purpose flour and 1 teaspoon lemon-pepper and whisk it well.
    • Dredge chicken wings into the egg mixture then Coat all pieces of chicken in flower.
    • Place wings 3 at a time into the hot oil and cook for 8 to 10 minutes, turning occasionally, until cooked through (165 F) and golden brown.
    • Remove to a paper towel lined sheet tray.
    • Make sure oil returns to temperature before adding the next batch.
    • Serve hot with warmed Doc Brown’s Really Bad Driftwood Smoked BBQ Sauce for dipping

     

    Make them Hot

     

    Needed Provisions:

    • Spicy Chicken Batter:
    • 2 eggs
    • 2 tablespoons hot sauce
    • 1 teaspoon cayenne pepper
    • 1 teaspoon black pepper
    • 1 tablespoon crushed red pepper flakes
    • 1 tablespoon seasoning salt
    • 2 cups all-purpose flour
    • 2 teaspoons poultry seasoning
    • 1 teaspoon lemon-pepper
    • Vegetable oil, to fry

    Directions:

    • Spicy Chicken Batter:
    • In a small bowl whisk together cayenne pepper, black pepper, red pepper flakes, seasoning salt, poultry seasoning, and lemon pepper. Set aside & reserve 2 tablespoons.
    • Whisk eggs,  add red pepper flakes, black pepper, and cayenne pepper into a medium size mixing bowl..
    • Put the flour into a shallow dish or pie plate.
    • In a large deep-fryer or large Dutch oven heat oil to 350 degrees °F on a deep-fat thermometer.
    • Dredge chicken wings into the egg mixture then into the flour. Place wings 3 at a time into the hot oil and cook for 8 to 10 minutes, turning occasionally, until cooked through (165 F) and golden brown.
    • Remove to a paper towel lined sheet tray. Make sure oil returns to temperature before adding the next batch.
    • Sprinkle the cooked wings with the reserved seasoning for extra hot wings.

    Serve with Doc Brown’s Really Bad Driftwood Smoked BBQ sauce for dipping. You’ll need it!

  • DOC’S TANGY CITRUS CHICKEN BREASTS

    Ingredients

    • 6 small chicken breasts 1 1/2 lbs
    • 3/4 cups Doc's Really Bad Driftwood Smoked BBQ
    • 1/2 of Fresh Orange firmly squeezed

    method

    • Wash and dry 6 small boneless skinless breasts 1 1/2 lbs
    • Pre heat oven to 375 °F
    • In a small bowl pour 3/4 cups Doc’s Really Bad Driftwood Smoked BBQ Sauce
    • Add 1/2 of Fresh Orange firmly squeezed and mixed.
    • In a large bowl coat all pieces of chicken and place in a non stick baking pan (or spray with non stick spray) or foil.
    • Pour any remaining sauce on top.
    • Bake in oven for 25 minutes or until chicken fully cooked (165 F)
    • Serve with rice pilaf and a vegetable or choice of baked potato or whatever!!

  • REALLY DARK COLA

    Ingredients

    • 1.5 oz Doc Brown's Really Bad "Dark "rum
    • 6oz Of any cola you dare to try.

    method

    Fill a Pint glass with ice add 6 oz’s of cola, add 1.5 oz of Doc Brown’s Really Bad “Dark Rum”  garnish with lime

  • REALLY BAD ALE

    Ingredients

    • 1.5 oz Really Bad Rum (Spiced)
    • 6 oz Ginger Ale

    method

    Fill a Highball glass with ice, add 1.5 oz Really Bad Rum, top with ginger ale, stir Garnish with a lemon.

  • LATIN MANHATTAN

    Ingredients

    • 2-1/2 oz Really Bad Rum (Dark)
    • 1/2 oz Sweet Vermouth
    • 1-2 Dashes of Bitters

    method

    Place ice in a Really Bad cocktail shaker. Add the Really Bad Dark Rum, vermouth and bitters and shake. Rub the orange peel around the rim of a Rocks glass. Strain the drink into the glass. Add 1 real maraschino cherry. (Shown On the Rocks)

  • REALLY BAD GALE

    Ingredients

    • 1 oz Really Bad Rum (Spiced)
    • 1/2 oz Licor 43
    • Ginger Beer
    • Garnish with a Lime

    method

    In a Collins or Highball glass filled with ice add 4 – 5 oz of choice Ginger Beer.  Next layer a 1/2 oz of Licor 43. Top of with 1 oz Really Bad Spiced Rum. Garnish with a lime.
